Strawberry Rhubarb Pie

Cook Time: 40 minutes


9-inch pie shells
rhubarb, chopped
strawberries, sliced
brown sugar
cloves, ground
white sugar



  1. Preheat oven to 425°F (220°C)
  2. Mix brown sugar, flour, cinnamon, and cloves in a bowl
  3. Add strawberries and rhubarb. Toss lightly
  4. Let stand 15 minutes. Toss again
  5. Spoon rhubarb-strawberry filling into pie shell; dot with butter or margarine
  6. If making a double-crust pie, follow steps 1 & 2 below.
  7. Bake for 30-40 minutes, or until pastry is golden and juices bubble up
  8. If this is not a double-crust pie, top with sliced strawberries & icing sugar
  9. Serve warm with vanilla ice cream. Simply delicious!
  1. Flatten second pie shell carefully. Cut in 1/2-inch strips with a pastry wheel or knife
  2. Cover filling with pastry strips. Brush with milk, sprinkle with white sugar

If you're using frozen berries and rhubarb, thaw and drain before adding to the pie or you'll have a very tasty soup!
