Swedish Meatballs

ingredients

Meatballs
large yellow or white onion, grated
butter
milk
bread, diced
eggs
ground pork
ground beef
salt
nutmeg
cardamom
pepper

Sauce
butter
flour
beef stock
sour cream
lingonberry or tart jelly

 

instructions

  1. Mix bread with milk. Set aside until the bread soaks up the milk – around 15 minutes.
  2. Pulverize the bread in a food processor.
  3. Add the other meatball ingredients, mix well.
  4. Form teaspoon-sized meatballs, set aside.
  5. In a large frying pan, brown meatballs in 6tbsp butter over medium heat. Set meatballs aside.
  6. Top up the butter in the meatball pan to 6 tbsp. Whisk in flour. Cook for 5 minutes or until medium brown.
  7. Heat beef stock, then whisk in to flour/butter mixture a bit at a time.
  8. Add meatballs to the sauce and cover. Cook on low heat for 10 minutes.
  9. When meatballs are done, move to a serving dish.
  10. Add sour cream and jelly to the sauce.
