ingredients

oil
chicken breasts
Vegetables
bok choy, torn & packed
sliced mushrooms
chopped broccoli
bean sprouts
grated carrot
slivered red or green pepper
frozen pea pods
Sauce
water
soy sauce
ginger
garlic powder
pepper
cornstarch

 

instructions

  1. Stir-fry chicken and oil in wok on med-high heat. Set aside in bowl
  2. Add vegetables to the wok, and stir fry for 3 minutes
  3. Add water and chicken
  4. Cover and simmer for 7 minutes, or until cooked
  5. Mix sauce ingredients in a cup
  6. Add to wok, and stir-fry until mixed and thickened
  7. Serve over rice or noodles, or with burrito shells as wraps

This is an extremely tasty stir fry that's gluten-free (depending on the brand of soy sauce) and great for when company comes. I eat it on rice, while my husband makes it as wraps.
