Chicken Parmigiano

chicken breasts – pounded to 1/2″ thick
olive oil
eggs, whisked
parmesan cheese, grated
salt and pepper to taste
Marinara sauce



  1. Preheat oven to 225°F (110°C)
  2. Heat oil in a large skillet over medium-high heat
  3. Pie Pan 1: 1/4 cup flour
  4. Pie Pan 2: eggs
  5. Pie Pan 3: 2 tablespoons flour, Parmigiano, thyme
  6. Season breasts with salt and pepper. Dip them in flour, egg, and parmigiano in turn
  7. Cook two breasts for about 4 minutes per side until lightly browned. Transfer to an oven proof-plate and keep warm in the oven
  8. Repeat dipping/cooking for other breasts
  9. Serve, topped with warm marinara sauce
