Blueberry Muffins

ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/4 tsp salt
  • 2 tsp baking powder
  • 1/3 cup canola oil
  • 1 large egg
  • 1/3 – 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup frozen blueberries
 

instructions

  1. Preheat oven to 400°F (200°C)
  2. Whisk the flour, sugar, baking powder, and salt in a large bowl
  3. Add oil to a measuring cup and add the egg. Add milk until the total liquids measure 1cup. Add vanilla and almond flavoring
  4. Add wet ingredients to dry ingredients and mix. Fold in the frozen blueberries
  5. Bake for 15 to 20 minutes or until a toothpick inserted into the middle comes out clean
  6. Stores 2-3 days at room temperature or up to 3 months in the freezer
