Butter Tarts

frozen tart (pastry) shells
brown sugar
butter, softened
corn syrup
eggs, slightly beaten



  1. Preheat oven to 400°F (200°C)
  2. Boil 2 cups water. Pour over raisins to cover, let stand 5 minutes. Drain
  3. Mix raisins, butter, sugar, salt, syrup, eggs, and vanilla
  4. Place 12 tart shells on baking sheet
  5. Fill tart shells. Bake 15-20 minutes. Cool on rack

These tarts are the best of both worlds: both buttery and raisin-ey without the distraction of nuts. I found that this recipe made more filling than necessary, so it might not hurt to have extra tart shells!
