Roasted Peppers

Serves: 2-4

Cook Time: 25 minutes


peppers (red, green, yellow, or orange)
olive oil



  1. Preheat oven to 350°F (180°C)
  2. Brush all peppers with olive oil, place on baking sheet
  3. Cook peppers on top oven rack until dark splotches appear on the outside. Skins will be easier to remove if they’re a bit burnt
  4. Remove from oven, turn over, and continue roasting until all sides are done
  5. Once cooked, place peppers in a large covered dish for 15-20 minutes. This steams the inside of the peppers
  6. Pull the stems out of each pepper. Peel off skin, remove seeds and pulp
  7. Slice and serve on their own, or toss in a crisp salad
