Pickled Carrots

Serves: 4-8
Ready In: 9 hours (chill time)
Prep Time: 15 minutes
Cook Time: 20 minutes


carrots, scraped
cinnamon sticks, broken
granulated sugar
white vinegar
mustard seeds



  1. Cut carrots into thin three-inch sticks
  2. Blanch in boiling water for about 3-4 minutes. Drain and and put in a bowl
  3. In a saucepan, combine the sugar, vinegar, water, mustard seeds, cloves and cinnamon. Bring to boil
  4. Reduce heat and simmer for about 10-12 minutes
  5. Pour over the carrots
  6. Allow to cool, then cover and refrigerate for a minimum of 8 hours
  7. Drain well before serving and discard the cloves and cinnamon
