Cranberry Waldorf Salad

  • 2 cups frozen cranberries
  • 3 cups miniature marshmallows
  • 3/4 cup sugar
  • 2 cups diced, unpeeled tart apples
  • 1 cup seedless green grapes, halved
  • 1/4 tsp salt
  • 1 cup whipping cream, well-whipped and chilled


  1. Grind cranberries with an immersion blender or food processor.
  2. Combine cranberries with marshmallows and sugar. Cover and chill over night.
  3. The next day, add the rest of the ingredients.
  4. Fold in the whipped cream and chill again.

I got this recipe from my sister in law, who got it from her aunt, who got it from her mother. It's one of those potluck specials that just keeps making the round. It's especially tasty since the salad is half fruit, half marshmallows and whipped cream. Not for the faint of heart (or lactose intolerant)!
