Spinach Dip

Serves: 8-10

sour cream
vegetable soup mix
frozen spinach
round sourdough bread
dark bread (rye, pumpernickel, whole wheat)



  1. Thaw the frozen spinach fully and drain well. Wring it out a bit with your hands to make sure it is well drained
  2. Chop the spinach. Mix with mayonnaise, soup mix, and sour cream
  3. Refrigerate, overnight if possible (to blend flavors)
  4. Hollow out sourdough bread with a knife
  5. Cut the bread removed from the loaf into 2 inch chunks for dipping
  6. Cut the second loaf of bread into cubes for dipping
  7. Place the hollowed out loaf of bread on a serving plate and fill the hollow with the chilled dip
  8. Arrange the cubes of bread around the loaf and use them to dip

I like bringing spinach dip along as an appetizer for potluck events. You can try switching out the vegetable soup mix with cream of leek soup mix to change things up: both are good.
