Pancakes

ingredients

flour
salt
sugar
baking powder
eggs (1 large or 2 small)
butter or vegetable oil
milk

 

instructions

  1. Sift dry ingredients together
  2. Add wet ingredients
  3. Mix with a whisk until there are no lumps
  4. Lightly grease a skillet. Heat over medium-high heat until a drop of water sizzles in the pan
  5. Pour about 3 tablespoons batter from tip of large spoon or from pitcher onto hot griddle
  6. Cook pancakes until puffed and dry around the edges. Tiny bubbles should begin to form in the middle
  7. Flip and cook the other side until golden brown
  8. Repeat with the rest of the batter

I usually double the milk required since we like our pancakes flat. Also, the first pancake never looks quite right. As the grease in the pan lessens, your pancakes will look better.
