Light ‘N Crisp Waffles

Makes: 8 waffles
Ready In: 30 minutes
Prep Time: 10 minutes
Cook Time: 15 minutes


eggs, separated
baking powder



  1. Preheat waffle maker
  2. Beat egg whites until stiff
  3. In medium bowl, mix all ingredients except egg whites until smooth
  4. Fold in egg whites with spatula
  5. Pour batter by 1/2 cup full into waffle maker. Bake until steam no longer escapes
  6. Serve with butter and syrup, fruit and whipped cream, or your choice of toppings

This is by far my favorite waffle recipe. It is, as the title says, light 'n crisp, which I much prefer over heavy doughy waffles. They don't stay crisp long when stacked, so eat 'em while they're hot!
