- Preheat oven to 350°F (180°C)
- Brush all peppers with olive oil, place on baking sheet
- Cook peppers on top oven rack until dark splotches appear on the outside. Skins will be easier to remove if they're a bit burnt
- Remove from oven, turn over, and continue roasting until all sides are done
- Once cooked, place peppers in a large covered dish for 15-20 minutes. This steams the inside of the peppers
- Pull the stems out of each pepper. Peel off skin, remove seeds and pulp
- Slice and serve on their own, or toss in a crisp salad
