Candied Yams

large yams
2 cups
brown sugar
1/2 cup
butter
2 cups
miniature marshmallows
1/4 cup
white sugar
2 tsp
salt
Preheat oven to 350°F (180°C)
Peel yams and cut into 2 inch discs. Place in large pot
Cover yams with water. Add salt and white sugar
Boil for 30 minutes, or until tender. Drain
Mash or whip yams, and put in baking dish
Sprinkle with brown sugar. Dot with butter
Bake for 20 minutes
Sprinkle with marshmallows. Bake until marshmallows are golden brown
