French Onion Soup

2 x-large
red onions
1 Tbsp
Olive oil
1 clove
garlic, minced
4 cups
beef broth or stock
1
bay leaf
8 slices
french bread
1 1/2 cups
Swiss Gruyere Cheese, grated
In a large saucepan, saut&233; onions in oil until browned
Add garlic and saut&233; for 1 minute
Add broth and bay leaf. Simmer 30 minutes
Remove bay leaf. Season to taste with salt and pepper
Ladle soup into oven-proof bowls or cassarole dish
Toast french bread. Slice into 1" cubes
Cover the soup with toast and sprinkle with cheese
Turn on the oven broiler to 350°F (180°C)
Broil for 10 minutes, or until cheese is slightly browned
