French Onion Soup

ingredients red onions
Olive oil
garlic, minced
beef broth or stock
bay leaf
french bread
Swiss Gruyere Cheese, grated
instructions
  1. In a large saucepan, saut&233; onions in oil until browned
  2. Add garlic and saut&233; for 1 minute
  3. Add broth and bay leaf. Simmer 30 minutes
  4. Remove bay leaf. Season to taste with salt and pepper
  5. Ladle soup into oven-proof bowls or cassarole dish
  6. Toast french bread. Slice into 1" cubes
  7. Cover the soup with toast and sprinkle with cheese
  8. Turn on the oven broiler to 350°F (180°C)
  9. Broil for 10 minutes, or until cheese is slightly browned
  10. Serve immediately
