Apple Streusel Muffins

Prep Time: 15 minutes
Cook Time: 25 minutes
Serves: 12 muffins
Ready In: 45 minutes

Topping
1/4 cupbrown sugar
2 tbspflour
2 tbspbutter, softened

Muffins
1 1/2 cupsflour
1/2 cupsugar
1 tbspbaking powder
1/2 tspsalt
1egg
1/2 cupmilk
1/4 cupoil
3/4 cupapple, grated

Preheat oven to 400°F (200°C)

Combine topping ingredients with fork until crumbly. Set aside

In mixing bowl stir together flour, sugar, baking powder and salt. Make a well in center

In another bowl beat egg, milk and cooking oil to blend

Stir in apple. Pour into well. Stir just until moistened

Fill muffin cups 3/4 full. Sprinkle with topping

Bake for 20 to 25 minutes and serve!
