Light 'N Crisp Waffles

8 waffles

ingredients eggs, separated
milk
flour
baking powder
salt
oil
instructions
  1. Preheat waffle maker
  2. Beat egg whites until stiff
  3. In medium bowl, mix all ingredients except egg whites until smooth
  4. Fold in egg whites with spatula
  5. Pour batter by 1/2 cup full into waffle maker. Bake until steam no longer escapes
  6. Serve with butter and syrup, fruit and whipped cream, or your choice of toppings

This is by far my favorite waffle recipe. It is, as the title says, light 'n crisp, which I much prefer over heavy waffles.
